Cool Mini Pound Cakes Are a Sweet Summer Snack!

For my monthly Longaberger Open House Monday night, I wanted to serve some cool fruit salad with some sort of cake or cookie.  I also wanted to try using my Pampered Chef Silicone Floral Cupcake Pan, and I found the perfect recipe online.  These Mini Pound Cakes were adapted by Jennifer Schall from a family recipe, and your family is sure to love them.  Try them this holiday weekend or any time, in a flower form or other--they're delicious.



One of my favorite parts was putting all the ingredients in my stand mixer and letting it mix for 20 minutes.  I got so much done during that time!  Jennifer Schall has nice photos and directions that you will find easy to follow at http://www.mykitchenaddiction.com/2009/03/mini-pound-cakes . We enjoyed these Monday night with slightly-frozen fruit salad with an orange glaze, and Jennifer served them with fresh berries and ice cream.  Jennifer made 24 cakes, but I probably overfilled and only got 20 from the recipe.  I hope you'll enjoy them!
