Fine-Tune Your Grilled Cheese for Lunch

Don't you just love a grilled cheese sandwich with soup, especially on a cool fall day?  I enjoy replacing the bread with a croissant.  Slice the croissant, put on the cheese and whatever else you want in in your sandwich (how about ham and Swiss?), put the two parts back together, and squash it as flat as possible.  Of course, you must toast it in a pan with real butter.   I use a lid on the pan, to help melt the cheese, and turn the sandwich and lightly toast both sides, as usual.  Yum!
